Good vegetarian food and good breakfast in Madrid

Any ideas for this?
We’re staying somewhere that doesn’t offer breakfast. I know you can go get pastry and chocolate, but I’d prefer something a bit more substantial. We’re staying near Puerta del Sol at Hostal Marlasca.
Also, my daughter is vegetarian, and I know Spanish meals tend to have meat throughout.
Also, any supermarket recommendations?
