I’m going all over Europe around May. Are hostels generally going to be completely booked up, should I book all of them in advance? The only downside I can think of with booking them in advance is that you have to pay right away, and you can’t change plans if you have to be at hostel on a certain day.

Generally in May you should be fine, but I would tend to book your first day of travelling and your last day of travelling in advance, you will be jet lagged the first day and the last thing you would want to be doing is lugging your bag around looking for somewhere and your last nite just to play it safe.
 
Keep an eye out for festivals, that’s when you need to book in advance, otherwise you should be fine
