How much time do you have? Perhaps you can take the train down to Avignon, and head from there. Some people don’t get too excited about Avignon, but I thought it was a lovely city. You could head towards Provence, or southwest of there. See the Pont du Gard, visit Arles, the Camargue, then hug the coast all the way down.
Alternative to Avignon: Toulouse (side trips to Albi or Carcassonne—or stay in Albi and visit Toulouse/Carcassonne.)
After that you could head toward the coast—Collioure is a charming coastal village near the Spanish border, and take the train the rest of the way.
