First trip to France, Spain, Italy. Help wanted!

Hi,
I’ve just booked flights for a three week (22 night) to Europe from Australia and I’d love some advice on where to go, stay, transport…etc. My boyfriend and I are after a good mix of culture, beach and possibly a wine tour in France or Italy for good measure!
The rough plan is:
FRANCE
4 days in Paris then explore beach/countryside. Maybe Nice as it will be hot?
SPAIN
3 days in Barcelona. We’d like to see San Sebastian or Madrid, but doubt we’ll have time on this trip.
ITALY
2 days in Rome. We’d like to see Naples, and also the Amalfi Coast while in Italy. Not sure of the best way to approach this though as I know it’s really expensive, especially during the holiday season in August.
Not sure where/when/how to squeeze in the wine tour.
TRAVEL DATES
Arrive in Paris 13 August
Leave Rome 5 September
BUDGET
$9,400 US for me and my partner ($4,700 each) including accomodation and internal flights/transport.
TRANSPORT
Wondering is train or plane is the best way to travel between countries. Heard it’s possible to save on accommodation by taking overnight train trips. We’re also considering hiring a car for parts of the trip.
Would really appreciate your recommendations and feedback.

To answer your question it should be hot, I hope!
$4,700 is a very healthy budget and the trip is easily affordable.
Probably train is best for getting from Paris down to Nice and round about, then continue on train to Barcelona and i think you will have time to fit in Madrid as well. Ryanair have cheap flight’s to Rome from Madrid. Car might be a good option for exploring Italy but i am no expert on the cost’s or ease of this.

you can do 1 country per week if you want
i’d do Paris and 1 other city
Barcelona and maybe 2 or 3 places
and I’d fly from Barcelona to Rome/other Italian place – Venice/Florence/Cinque Terre
