Pricing and credit card safety with advance booking?

Hi again everyone –
Since my friend and I are more or less set on how long we plan to stay in each city, I am guessing booking in advance for at least 80% of the trip is the way to go.
My only concerns are as follows:
1. How safe is it to use your credit card (from the United States) for this? I may be a little over anxious about this, but both my parents have been victims of identity theft…so its a concern for me. How do you guys manage the risk?
2. Do most places require just a deposit? How much does that usually run? Booking fees?
3. In light of 1 & 2, any hostel recommendations for the following cities would be much appreciated: )
Berlin
Amsterdam
Paris
Barcelona
Madrid
I really would appreciate any help on this! The lodging part has been the most stressful part of the trip, so I could use some advice from the more seasoned travelers on the forum.

If you book on eurotrip.com, you will not have to worry about anything. The hostel will never see your credit card info, just the deposit. We do not charge any booking fees (unlike hostelworld), so the price you see is the price you pay (be sure to check the different bed options on the checkout page).
You will usually have to put 10% down as a deposit and then you will pay the balance when you actually arrive at the hostel.
