Questions from an Antipodean moving to Corfu!

Well I hope somebody might have done this already as I haven’t found any threads relating to my situation in particular but here goes anyway.
I am about to be employed by a Greek Company in Corfu, they need me as I have certain skills that are currently not available in Greece, or the EU for that matter, but anyway my main advantage over other applicants might/would be that I am also Married to an Italian.
Now I am assuming that this might make my Visa/Permit Process a little smoother but a grey area still exists. I have not lived in Europe to date and hold an Australian Passport still.
What procedures do other Non-EU partners do when offered employment prospects in the European Union?
Is it better to apply for the right to work in Italy first before comming across to Greece or am I just worrying too much about this? Would there be a fairly straightforward process in the end?
Well I hope there are people who might know a little on this subject as any advice would be kindly appreciated.

I don’t know specifics about Greece. Normally, your employer files paperwork (your job offer) with the closest employment office so that immigration officials checking out your work permit application can see if all is kosher. The wife should seek residence under family reunification. Your employer should assist you in the process.
