Summer Work on an Island

Hello all,
I have heard rumors from some people I have met while traveling about Europe, that in the summer months there are tons of jobs available in Lagos, Portugal, the Canary Islands and the Greek islands. It was also mentioned to me that a vaild work permit is not generally needed as most postions are paid under the table. I am an American so I have to look for these places that require no documentaion.
Can anyone tell me if these rumors are true, and if so, which is the best place to pick?

no idea, but I think it would be just going there and asking around. Since its off the record, i doubt they would advertise, just through word of mouth
