This looks pretty good. You have given your self enough time pretty much everywhere, unlike most trips on here, so you should be pretty comfortable taking this route.
I am assuming you are doing some cheap flights on this trip?
I have never been to Rome and only to Paris once, but most people on here recommend 5 days in each of them. There is a lot to see, so that is something to consider. I actually had to cut my time short in Paris because I got sick and really only had 2 solid days there. I missed a lot, but I think I would have been fine with 4.
All in all, I think you have a very good trip here. Enjoy.

We wanted to cover a decent amount of cities, but stay long enough in each to get comfortable and relax. Going to try to pick a few “must see” things in each city, and take the rest as it comes so we don’t get overwhelmed with trying to fit too many things in.
As far as the cheap flights go, I found a one-way for 2 from Athens to Barcelona for a total of $200E (Click Air), and a round trip for 2 from Barcelona to Menorca for a total of $175E (Air Europa). This seems decent, but I’m not really sure.
Do you know if it is easy to get from Nice to Interlaken by train?
When I check the schedule online, it cannot produce that trip…
Nice to Interlaken will take you a day with a bunch of connections.

It looks doable, Although have you checked out the flights from Menorca to Santorini. dont know if any exists.
I think you’re right.
I thought flying out of Barcelona to Athens would be best.
Spend a day & night in Athens…boat to Santorini for 3 days…then fly over to Corfu for 3 days…head over to Italy from there.
