I would scrap the three days from Hamburg, and add to Nancy, Strasbourg, and Munich. Hamburg was such a let down. Really a bad ‘destination’. Strasbourg is beautiful, Nancy is nice (2 days max), and Munich is a great experience. Is there a reason for visiting Essen? Otherwise a couple days spent on the Rhine or in Dusseldorf may be a better choice.
